Introduction

Ingredients

    Dry:
    2.5 cups flour
    2Tablespoons baking powder
    1 cup granulated sugar
    1/4 cup old fashioned oats
    1 cup dried cranberries
    1/4 cup candied orange peel
    1/4 cup chopped pecans

    Wet:
    1/2 cup egg substitute
    2 cups Kefir low fat plain yogurt

Directions

Pre-heat oven to 350 degrees.
Prepare muffin tins by spraying with non-stick spray.

Mix all dry ingredients together in a large mixing bowl. Stir well.

In a separate bowl, mix egg substitute and yogurt. Mix well and add to dry ingredients. Stir until just moistened throughout.

Fill prepared muffin tins 3/4 full. Sprinkle tops of muffins with chopped pecans, then bake in pre-heated oven for 20 to 25 minutes or until muffin tops are browned.

Remove from tins and cool on cooling rack.
