Number of Servings: 4


    Olive oil, 2 tbsp. divided
    Fresh rosemary, 1 tbsp. (or 1 tsp. dried)
    Chicken thighs, 1 lb. skinless, boneless chopped into bite-size pieces
    Salt, dash
    Black pepper, 1 tsp.
    Onion, one medium diced
    Celery, 2 stalks diced
    Carrots, 1 cup matchsticks


1. Heat 1 tbsp. olive oil in a large skillet over medium heat.
2. Crush or shop rosemary and add to heated oil. Stir and cook 1 minute.
3. Add salt and pepper to taste to chciken pieces (if amonts increase from recipe, nutritional info may vary).
4. Add chicken pieces to oil in pan and stir fry until done, about 10 minutes.
5. Remove chicken to a separate bowl, add remaining oil to pan and heat oil.
6. When oil is hot, add vegetables and stir fry until onion is translucent, about 5 minutes.
7. Return chicken to pan and stir fry 2-3 more minutes to belnd flavors.
8. Serve hot over white rice or noodles (not included in nutrition info).
