Introduction

This salad is so quick and easy to put together and so good for you! I love it fresh but it can also be refrigerated and served cold. This salad is so quick and easy to put together and so good for you! I love it fresh but it can also be refrigerated and served cold.
Number of Servings: 8

Ingredients

    1 15 oz can Whole kernel yellow corn, drained or 1 2/3 cup frozen yellow corn, thawed (frozen used in nutrition calculations)
    1 15 oz can Black beans, drained and rinsed
    1 10 oz can Tomatoes with green chilies (Rotel), DO NOT DRAIN
    1 medium Avocado, diced
    1/2 tsp Garlic powder
    1/2 tsp Table salt
    3 Tbsp Lemon juice, canned or bottled

Directions

Mix all ingredients except lemon juice. Add lemon juice to taste (I like about 1 Tbsp but you can add more if you want). Mix and serve!

Makes approximately 8 1/2-cup servings.
