    4 tsp olive oil, divided
    1 cup chopped onion
    2 tsp crushed garlic
    1 jalapeno pepper, minced
    1 tsp chili powder
    1/2 tsp ground cumin
    1/4 tsp black pepper
    1/2 pound lean ground turkey
    2 large whole wheat tortillas
    1 can pinto beans, 15 0z, drained)
    1 tbsp lime juice
    2 cups chopped seeded tomato, or canned diced or crushed
    2 tbsp fresh cilantro
    100 grams low fat, monteray jack cheese, shredded


Preheat oven to 350. Lighty oil a round casserole dish or pie pan.
Heat 2 tsp olive oil in a large skillet over medium heat. Brown turkey. Add onions and cook until onions are transparent. Add garlic and jalapeno. Cook for one minute. Add chili powder, cumin and pepper.
Place one of the tortillas in pie pan. Top with meat mixture.
Heat remaining 2 tsp oil in pan. Add beans and mash. Cook until thick. About 2 minutes. Add lime juice. Add tomatoes and cilantro. Pour over meat mixture.
Top with remaining tortilla. Sprinkle with cheese. Bake for about 13 minutes or until cheese is bubbly.
OPTIONAL: serve with sour cream, chopped green onions on top.
