Introduction

This is a muffin mix recipe that you make ahead and store in the fridge for up to 6 weeks. It is nice to have on hand to make muffins fresh out of the oven anytime! This is a muffin mix recipe that you make ahead and store in the fridge for up to 6 weeks. It is nice to have on hand to make muffins fresh out of the oven anytime!

Ingredients

    15 oz box Raisin Bran cereal
    3 c white flour
    2 c whole wheat flour
    2 c sugar
    1 c Splenda granular
    5 tsp soda
    2 tsp salt
    1 c egg beaters
    1 1/2 c ground flax meal (if left out, substitute additional 1/2 c oil)
    1/2 c vegetable oil
    1 qt lowfat buttermilk
    1 c nuts

Directions

Mix dry ingredients well, then mix wet ingredients in a separate bowl. Add wet to dry and mix until just combined. Store in large jar or tupperware containers in refrigerator until ready to use, for up to 6 weeks. When ready to bake, preheat oven to 400 degrees and bake about 25 minutes until a toothpick inserted comes out clean.
Makes approximately 50 muffins.
