    2 red bell peppers
    3 TBSP olive oil
    1 cup chopped Onion
    2 tsp. ground cumin
    1 tsp crushed red pepper
    1 tsp paprika
    4 garlic gloves sliced
    2 cups Swanson Chicken broth reduced sodium Or Vegetable broth
    1 1/2 cups cubed peeled butternut squash
    1 28 oz can tomatoes chopped
    1 15 oz can pinto beans rinsed & drained
    1 15 oz can black beans rinsed & drained
    1 15 oz can pinto beans rinsed & drained
    1/2 cup thinly sliced green onions


Preheat Broiler
Cut peppers in half lengthwise. Remove seed. Place peppers skin size up on foil lined baking sheet. Broil 15 minutes or until blackened. Place peppers in a zip top plastic bag. Seal. Let stand 15 minutes. Peel and chop peppers.

Heat a dutch oven over medium low heat. Add oil to pan. Add onions cook 15 minutes stirring occasionally. Stir in cumin and next 4 ingredients. (though garlic) Cook 2 minutes, stirring frequently. Add bell peppers, broth, squash, and tomatoes. Cook 20 minutes stirring occasionally. Add beans simmer another 25 minutes or until slightly thick. Sprinkle with green onions.
