    2 baking potatoes sliced thin
    4T unsalted butter
    2T flour
    1c milk
    6 oz velveeta cheese product
    pepper to taste


scrub potatoes, slice in thin even slices leaving the skin on

Make a rue with butter, flour, milk. then add cheese and melt. Pour rue/cheese mixture over potatoes in medium baking dish. Add pepper.

Bake 350 degrees for 30-45 minutes, until potatoes yield to fork.

Makes 8 servings.
