    2 tbsp flour
    1/4 tsp black pepper
    2 boneless, skinless chicken breasts
    1 tbsp olive oil
    1/2 large onion, cut in half lengthwise, then thinly cut (1 cup)
    1/2 cup chicken broth
    1 tbsp balsamic vinegar
    1/4 tsp dried thyme or 1 tsp fresh thyme


Mix flour and pepper an coat chicken with it.
Heat oil in a skillet over medium heat. Add chicken & cook, turning once until browned and cooked through. About 10 minutes. Remove to plate.
Add onion to skillet and saute 1-2 minutes. Add broth, vinegar and thyme. (OPTIONAL: add dash of sea salt and pepper) Bring to boil and cook, stiring often, until onions are cooked and sauce is syrupy. Spoon over chicken.
