Creamy shrimp and mushroom pasta dish tastes more fattening than it is. Creamy shrimp and mushroom pasta dish tastes more fattening than it is.
Number of Servings: 4


    16 oz Shrimp
    1 can Cream of Mushroom (low fat)
    6 tsp light margarine
    3/4 cup onion, celery, peppers (chopped)
    1 jar mushrooms (any size/style)
    8 oz of angel hair pasta


Boil pasta per instructions and drain.

In a non-stick pot, combine margarine, onions, celery, peppers, and mushooms. Sautee for 5 minutes over medium heat.

Add cream of mushroom soup. Season to taste with salt, garlic, hot sauce, and/or liquid seafood boil. Allow mixture to cook over medium heat for 5 minutes. Stir frequently.

Add shrimp and bring mixture to soft rolling boil. Set heat to low. Allow the sauce to simmer for 10 minutes.

Turn off heat. Add cooked pasta. If time permits, allow the dish to sit covered for 10 or minutes to allow the ingredients to mesh.

Makes approximately 4 generous servings.
