Ingredients

1 1/4 cups whole wheat or white WW flour
1/4 chopped walnuts
2 tsp baking powder
1 tsp cinnamon
1/8 tsp ground nutmeg
dash cloves
dash of ginger
1/4 cup brown sugar
1/2 cup low fat milk
1/4 cup low fat sour cream (or yogurt)
1 1/2 tsp vanilla extract
2 large fresh eggs, beaten
2 cups finely grated carrot
cooking spray (OPTIONAL)
Directions
Put all dry ingredients in a large mixing bowl. Add all remaining ingredients. Mix just until blended.
In a lrage non-stick skillet (you may want to spray with non-stick spray) add about 1/4 cup of batter for each pancake. Cook until edges are dry and bubbly and then flip over.
