Number of Servings: 4


    300 gr chopped celery
    300 gr frozen spinach
    300 gr butternut squash, peeled and cut up into chunks
    100 gr finely chopped onion
    100 gr chopped broccoli


Gently saute the onion in the olive oil adding a little water if it gets dry. When it is soft but not brown add the celery and about a litre of boiling water. Simmer for five minutes then add the rest of the ingredients, bring back to the boil and let simmer for another 20 minutes.

makes 4 generous portions.

You could vary the ingredients, depending on what veggies you have in the fridge; carrots and leeks work well. I don't add salt to any of the food I cook but of course you could if you need it; a little vegetable buillion would probably improve it.
