    6-8 cups Butternut Squash, peeled & cubed
    4 cups Vegetable Broth
    1/2 c Vidallia Onions, chopped
    1 small Apples, peeled & cubed
    1/2 tsp Salt (or to taste)
    1/2 tsp Black Pepper (or to taste)
    1 tsp Allspice (or to taste)
    1/3 cup Low fat cream cheese, cubed


In a large stock pot, combine broth, squash, onion and apple; cover pot and bring to a boil over high heat. Uncover pot and reduce heat to low; gently simmer until squash is very tender, approx. 10-15 minutes.
Puree soup in pot using an immersion blender (or puree in a regular blender in batches, careful not to splatter hot liquid). Season with salt, pepper and nutmeg. Pour soup back into stock pot and add cream cheese. Heat soup until cream cheese is melted; serve.
Yields about 8-1 cup servings.
