A low calorie but rich tasting soup. A low calorie but rich tasting soup.
Number of Servings: 3


    *Squash, winter, acorn, raw, 1 squash
    Onions, raw, .5 cup, chopped
    Ginger, ground, 1-1 1/2 tsp
    Chicken Broth, 2 cup (16 fl oz) )
    Thyme, ground, 1 tsp
    *Bay Leaf - 1,
    Olive Oil, 1 tbsp
    Maple Syrup, .25 cup
    Salt, 1 tsp


Slice quash into and remove seeds. Bake in 350 degree oven until soft. Saute onions in olive oil and add scooped out squash. Season and add chicken broth. Simmer until all flavors have melded.

Makes 3 servings of 1/2+ cup
