Introduction

This is a Diabetic recipe.
It's kind of bland and for some reason I think it would taste better with chicken.
This recipe uses cooking spray which is NOT listed in the Spark Data base.
Can be served with whole wheat cooked spaghetti or any kind of pasta which is NOT included in the nutrition information.

Ingredients

    1 tsp white cooking wine
    2 TBS plain nonfat yogurt
    3 TBS Sour Cream, reduced fat
    PINCH Splenda
    pinch Pepper
    PINCH Basil, 1 tbsp
    1/2 cup Stewed Tomatoes
    1/2 tsp Extra Light Olive Oil
    3 oz Beef sirloin cut into strips
    1/4 cup chopped Onions
    1/2 cup Mushrooms, fresh sliced

    Serve with whole wheat Spaghetti or whole wheat pasta.

Directions

In small bowl, mix wine, yogurt, sour cream, sugar, flour, salt, pepper, basil and tomatoes. Set aside

In a skillet sprayed with nonstick cooking spray, over medium-high heat, add beef strips and cook until meat is no longer pink. Remove beef from the skillet

Add 1 tsp oil and onions. Saute 2-3 minutes then add mushrooms. Saute until soft.

Add tomato mixture and cook about 4-5 minutes until thickened. Add beef strips back and heat thoroughly.

Serve over spaghetti noodles.
Makes 2 servings.
