    6 oz canned tuna in water, drained
    2 c spinach, torn into small bite-sized pieces
    1/2 c diced onions
    1/2 c diced sweet peppers, mixed colors (red, yellow, green)
    1 T capers
    1/2 c diced dill pickles
    2 large eggs, boiled & chopped
    Salt & Pepper and your favorite seasonings, to taste
    1 ripe Hass avocado, mashed
    2 T dijon mustard


Mix all ingredients together. Store in refrigerator. Good in pitas or on whole-wheat sandwich thins.
