A light take on great taste - cashews add a little extra protein and taste to a great chicken salad. Subbing the greek yogurt and Smart Balance for mayonaisse dramatically drops the fat content, without sacrificing creaminess and taste. Ingredients

    2 large Chicken Breasts, no skin, chopped
    3 stalks of celery, finely chopped
    1/4 C. dry roasted cashews (salted)
    1/2 C. greek yogurt (plain)
    1/4 C. Smart Balance Omega plus light mayo
    Cilantro (to taste)
    Salt and pepper to taste
    Garlic and onion powder to taste

Directions

Combine all ingredients in bowl. Refrigerate for at least 1 hour. Makes 5 - 6 servings.

Base chicken salad omits the cashews. You can add peanuts, chopped apples, sliced grapes, shredded cheese, raisins, or any other item you'd like to the base salad. Nutrition as calculated includes cashews.
