    1 cup all-purpose flour
    1 Tbsp. baking powder
    1/4 tsp.salt
    8 Tbsp (1 stick) unsalted butter
    3/4 cup sugar
    2 large eggs
    2 large peeled peaches, sliced
    1 Tbsp. sugar with 1/4 tsp. cinnamon


Preheat oven to 350 degrees. Grease 9 inch round pan. Whisk together flour, baking powder and salt. In large bowl, beat on medium speed the sugar and butter until light and fluffy, about 3-4 minutes. beat in eggs, one at a time just until blended, Stir in the flour mixture just until incorporated. Scrape the batter into the pan and arrange peach slices on top. Sprinkle sugar and cinnamon over the peaches. Bake until the topping is golden brown and toothpick comes out clean, about 40 minutes. Let cool to room temperature before serving. Makes 8 servings.
