    1 onion (chopped)
    2 carrots (chopped)
    2 celery stalks (chopped)
    1 head of cauliflower - cut into small pieces
    1 bunch of broccoli, - cut into small pieces
    1 potato (cut into small pieces - or grated for faster cooking time)
    1 L Chicken Stock
    2 - 3 tbsp Dijon Mustard
    Salt and Pepper to taste


Melt butter over medium heat in large pot. Add olive oil. Once melted, add onion, carrots and celery and cook till onion is translucent (about 6-7 minutes)
Add the rest of the vegetables, and cover with chicken stock. Bring to a boil, and then simmer over medium heat until potatoes are soft. Add dijon.
Blend with an immersion blender, and blend until smooth.
Season with salt and pepper.
