    1 lb of chicken breast, skin and fat removed
    1 medium size red bell pepper, seeded and sliced
    1/2 cup of sugar snap pea pods
    2 tbsp of chopped shallots
    1/4 cup of chicken broth
    1/2 tsp of salt
    1/4 tsp of pepper


Preheat oven to 450 Spary a large nonstick skillet with cooking spray. Put over med. high heat and add the vegetables and broth. Cook for 2-3 minutes stiring constatnly.

Using 4 12 inch pieces of aluminum foil, place 4 oz of chicken breast on foil and topped with vegetable mixture and salt and pepper.

Make a packet by bringing the sides of the foil up to meet in the center, fold over and make sure to allow for room the packet to expand.

Cook for 18-22 minutes or until chicken is done. Be careful opening packet since there will be steam trapped.
