Introduction

My mother made this soup and would add either stew meat or lean ground beef. She was well known through out family and friends for her vegetable soup! Ingredients

    4 medium sized potatoes
    1 cup sliced okra
    1 cup frozen corn kernels
    1 cup fozen green peas
    1 can rinsed Kedney beans
    1 can diced tomatoes
    1/2 cup chopped celery
    10 peeled cut up baby carrots
    1/2 cup chopped onion
    1 cup frozen green beans
    1 lb lean ground beef browned in skillet
    2 tsp salt
    1 tsp garlic powder
    any of your favorite seasonings like a little sage, thyme, etc.

Directions

I cook this in a 6 quart dutch oven. I've never learned to make just a small amount!
Peel potatoes and cut into chunks, put in dutch oven, add peas, carrots cut up, corn, green beans, okra, chopped onions, diced tomatoes, diced celery, kidney beans drained and rinsed. Add enough water to fill dutch oven. Add salt, garlic powder and seasonings. Brown ground beef, drain and add to soup in dutch oven. Cook over medium heat until done...aproximately 30-45 minutes. Serve with cornbread or crackers! Delicious and even better the next day! Can also be frozen for future meals! Serving size is 1 cup! Enjoy!
