Introduction

An adaptation of my mom's classic carrot soup recipe to include the kick of horseradish! Makes a nice thick and fragrant soup. An adaptation of my mom's classic carrot soup recipe to include the kick of horseradish! Makes a nice thick and fragrant soup.
Number of Servings: 4

Ingredients

    1 large onion, chopped
    2 Tbsp butter
    5 cups carrots, chopped
    1/4 cup flour
    4 cups vegetable broth
    3 Tbsp horseradish (more to taste)
    2 cup 2% milk
    salt and pepper to taste

Directions

Saute onions in butter over medium heat for 5 minutes.

Add carrots, turn heat to medium-low and saute for 15 minutes.

Sprinkle with flour then mix to coat veggies well.

Add broth and bring to a boil. Reduce heat to a simmer and simmer for 15 to 30 minutes until carrots and potatoes are tender.

Stir in horseradish.

Blend until quite smooth.

Stir in milk, taste, and adjust seasoning as necessary. Makes very large servings for four.
