    47 oz can of tomato juice (or you can use crush tomatoes or sauce, etc. )
    3 cups water
    spices to taste
    1 lb ground turkey, browned
    2 cups mixed vegetables
    1 cup brown rice (quick kind)


Pour the tomato juice into a large pot and add water. Set it on stove to boil. Add vegetables. Brown your ground turkey and drain any fat, then add the turkey to the soup. Add spices to taste. After cooking about 30 minutes, add the quick brown rice to the pot and let it boil another 10-15 minutes. When rice is soft, it's done. Serve with crackers or a warmed loaf of bread.

This is a basic veggie soup recipe that we've been using for a while. It makes enough for dinner and leftovers the following day.
