    4 cups cooked cubed potatoes*
    2 large hard boiled eggs, chopped
    1/2 cup finely chopped celery
    1/2 cup finely chopped onion
    1/2 teaspoon celery seed
    2 cups light mayonnaise
    1/4 cup My Best Zucchini Relish
    a little paprika


Toss the vegetables and egg together. Sprinkle with a little salt and pepper if desired.

Mix together the mayonnaise, celery seed, and relish.

Stir the mayo mixture into the vegetables until well mixed.

Sprinkle with the paprika and refrigerate until ready to serve.

*Boil the potatoes in their skins the day before peeling and cubing. It makes a better salad.
