Ingredients

1.5 lbs Red Potatoes skin on cubes or wedges
1.5 lbs Gold Potatoes skin on cubes or wedges
2T Olive Oil
2t Italian seasoning mix
1t Garlic Powder w/Parsley
Directions
Makes 9 - 4oz servings prepared
Approx 1cup is 4oz by weight prepared.
Preheat oven to 425-450 prior to starting prep ;)
1. Cut Potatoes evenly, cube or wedges works. If using the baby potatoes cut them in half then cut side down cut that into 4pcs...this is about the size of cut I usually use.
2. Put all the potatoes into a 1gal zip top bag and add olive oil. Close and shake the whole thing up. Open and add spices then close and shake them again.
3. Let potatoes sit until oven is ready. Lightly spray non-fat cooking oil onto a paper towel and grease the inside of a 9x13 glass baking dish.
4 When oven is ready pour potatoes into dish, level them out and put in.
You can to turn part way through if you want. I don't because I want one really done crusted side with the softer side on the other. Rosemary is also really good in this dish, onions, red peppers....experiment with it. Enjoy.
