    1 eggplant, pealed and cubed
    1 red bell pepper, chopped
    3 oz mushrooms, chopped
    1/2 cup Weight watchers 4 cheese mexican blend
    1/2 cup part skim mozzarella cheese
    1/2 cup part skim ricotta cheese
    3/4 cup ragu light tomato and basil sauce


Preheat oven to 350.
Spread 1/4 cup of Ragu sauce on the bottom of a 13 x 9 inch pan.
Evenly spread the diced eggplant on the bottom of the pan
Evenly spread the ricotta cheese over the eggplant
Top with 1/4 cup Ragu sauce
Top with chopped peppers and mushrooms
Sprinkle mozzarella and mexican cheese on top
Place 1/4 cup Ragu sauce around the corners of the pan to keep from burning
Cook at 350 for 50 minutes, or until eggplant is soft.
Makes 4 servings.
