Ingredients

    1 lb dry pinto beans sorted and rinsed
    1 3lb roast (can use beef or pork but nutrition facts are for beef)
    1 can rotel tomatoes and chilies
    1 can (4oz) green chilies
    1 tbsp oregano
    1 tbsp chili powder
    1 tsp cumin
    32 oz chicken broth
    2 cloves garlic crushed

Directions

place all ingredients into slow cooker and cook until beans are done and roast is fork tender and easy to shred. remove roast and shred, return to slow cooker and allow to simmer until thicker or until some of the moisture evaporates.

Serve with lettuce, tomato, onion, cheese, sour cream or any other toppings you like. Great over rice, tortilla chips, or served with fried eggs as a breakfast food.
