    2 lb pork loin roast
    salt, pepper, garlic powder
    1 tbsp olive oil
    1 green pepper, chopped
    1 lg onion chopped
    10 baby carrots, halved lengthwise
    2 stalks celery, chopped
    1/4 cup orange marmalade
    1/2 cup low sodium chicken broth
    2 tbsp low sodium soy sauce


season roast liberally with salt pepper and garlic powder. Heat skillet over med-hi heat, add oil and sear roast on all sides until nicely browned.

Place all chopped veggies in slow cooker, then roast on top of veggies. Mix together orange marmalade, soy sauce and soy sauce and pour over roast.

Set on low 8-10 hrs or high 6 hrs.

Can be shredded after done cooking and tastes great over brown rice.
