Ingredients

16 ounce package of gnocchi
10 ounce package of mushrooms, sliced
3 large leeks, sliced thin
3 medium carrots, sliced thin
2 TBSP of I Can't Believe It's Not Butter
1/2 cup of White Wine
1 1/2 cup Low-sodium chicken broth
Directions
Fill a large sauce pan with water. Once the water is boiling, drop in the gnocchi and cook as directed.
Meanwhile, put the margarine in a saute pan. Immediately drop in the leeks, mushrooms and carrots. Let the vegetables cook for 15 minutes on medium-heat.
When done, drain the gnocchi and put them in the pan with the vegetables. Raise the heat to high and add the white wine. Let the alcohol cook out for 3 minutes, then add the chicken broth. Lower heat to medium once again, and cook for 5 more minutes. Season with salt and pepper to taste.

I won't be making this again. I found the flavour bland and the combination of textures unappealing (even with cooking times adjusted--see below). Also, as the recipe is written the cooking time (cooking the gnocchi separately, THEN for 8 minutes more with the vegetables) seems way out of line. - 1/28/11
