    4 cups vegetable broth (or chicken), low sodium
    4 cups water
    1 cup chopped onion
    2 3/4 cup diced celery
    1 3/4 cup snap peas, cut into pieces
    1 tbsp grated ginger
    2 tbsp chopped garlic
    2 tbsp Bragg Liquid Aminos (or low sodium soy sauce)
    4 tbsp rice vinegar
    3 tbsp shiro miso paste
    1 lb skinless, boneless chicken breasts, diced
    1 cup cooked mushrooms (or equivalent)
    1 tbsp sriracha sauce (hot chili sauce or equivalent)
    1/2 cup liquid egg white
    1 tbsp olive oil


Heat up olive oil in soup stock pot. Add onions, celery, garlic and diced chicken. Saute for 10 minutes, allowing the onions to sweat and chicken to begin to cook. Add all of the ingredients except the miso and the egg whites. Simmer until the veggies are cooked to your liking (30-45 minutes). Add miso and stir well to blend it into the broth. Turn up the heat to a slow boil and slowly pour in the egg whites stirring constantly.

Makes 8 2-cup servings.
