    2 c peeled butternut squash
    1 c onion large diced
    2 c carrots
    2 c zucchini
    2 TBS olive oil
    fine sea salt
    1.5 tea black pepper
    1.5 c vegetable broth
    2 TBS earth balance
    .25 tea cucumin
    1/2 tea saffron threads
    1 c whole wheat cousous
    2 scallions sliced


1. preheat oven to 375 degrees F
2. toss the onion, carrots, squash, zucchini with oil and some sea salt and 1/2 of black pepper, put in oven for 25 to 30 min
3. meanwhile boil vegetable broth, once boiling take off heat and add earth balance and 1/2 of spices, cover and let steep for 15min.
4. add cousous in and bring back to boil, once boiling take off heat and cover.
5. Fluff couscous then add roasted vegeatables and sprikle with scallions.
