Very tasty chicken dish with a refreshing after taste. Very tasty chicken dish with a refreshing after taste.
Number of Servings: 4


    3 boneless, skinless chicken breasts
    .5 tsp salt
    .5 tsp pepper
    1 tbsp olive oil
    1 lemon (juiced)
    1 Medium tomato (chopped)
    .5 cup onion (chopped)
    .5 cup fresh parsley (chopped)
    1 tbsp oregano
    .25 cup white wine
    .75 cup chicken broth
    1.5 cups green pepper
    1.5 cups red pepper
    1 tbsp Basi
    1 tsp Ginger


1. cut chicken into chunks add salt & pepper
2. Heat skillet with olive oil and add seasoned chicken
3. Cook chicken until lightly browned (about 15 minutes)
4. Add garlic, lemon, half tomato, onion, parsley, oregano, basil, and ginger
5. Add wine & chicken broth cover and simmer for 15 minutes
6. Add remaining tomato and the peppers and simmer for 7 - 10 minutes longer.

Makes 4, 1.5 cup servings
