Introduction

I got this recipe from Cambell's. I never use canned potatoes because they are always in syrup and i don't want the extra calories. Some of the ingredients are only necessary if using fresh potatoes(which I did) so please read carefully or it will be too sweet. I got this recipe from Cambell's. Ingredients

    Vegetable cooking spray
    1 can (40 oz.) cut sweet potatoes in heavy syrup, drained (or 2 large sweet potatoes, peeled and boiled, this is what I used in calculations)
    1/4 cup brown sugar(only if using fresh potatoes)
    1/4 cup Log Cabin Sugar Free Syrup(only if using fresh potatoes)
    1/4 tsp. ground cinnamon
    1/8 tsp. ground ginger
    3/4 cup Swanson® Chicken Broth
    2 cups miniature marshmallows(optional, not in calculations)


Directions

Spray a 1 1/2-quart casserole with cooking spray. Set the dish aside.

PLACE Place the potatoes, (if using fresh potatoes, peel and boil them first) cinnamon and ginger in a 3-quart bowl. Beat with an electric mixer on medium speed until the potatoes are fluffy and almost smooth. Add the broth and beat until the ingredients are mixed. Spoon the potato mixture into the prepared dish. Top with the marshmallows if you like.

Bake at 350┬░F. for 20 minutes or until hot and marshmallows are golden brown.

Note: If you use canned potatoes in syrup along with the marshmallows, one serving will contain 140 calories

  • Incredible!
    Loved it.
    However, did not think it needed the brown sugar and syrup as the potatoes are sweet already, so I omitted those. And I did not add the marshmallow either.
    I did add 1 splenda to the cinammon, ginger and spice.
