Number of Servings: 6


    Whole Wheat Linguini (16 oz.)
    Shrimp (1 lb)
    Olive Oil (2 Tablespoons)
    Garlic (5 cloves, minced)
    Onion (1/2 cup, chopped)
    White Wine (1 cup)
    Diced Tomatoes (14.5 oz. can)


Cook the linguini according to package directions. Meanwhile, cook the shrimp in a lightly oiled pan on medium-high heat until pink and then set aside. Decrease heat to medium and add olive oil (preferably EVOO) to can also sprinkle in ground pepper for a little extra spice if you want. Add the garlic and the onion and saute for several minutes. Return the shrimp to the pan, adding the wine and the tomatoes. Simmer until shrimp is cooked thoroughly. Add parsley, salt and pepper to taste. Serve over the linguini.

Optional: Add fresh parmesan (this is not factored in to the calorie count)
