Number of Servings: 6

Ingredients

    6 Cups Onions, I use sweet onions
    3 tsp brown sugar
    2-3 cloves garlic
    1 1/2 Tbsp olive oil
    1 1/2 Tbsp butter
    8 Cups beef broth or 2 paper containers
    1 tsp caraway seeds
    1/2 tsp. thyme
    1/2 tsp salt
    1/2 tsp. pepper
    1/2 slice provolone cheese and 5 croutons each bowl

Directions

Heat large pot on medium. Add olive oil and butter. Add onions and 1/2 tsp salt. Cook until soft and translucent on medium-low. Add brown sugar and cook on low until onions are carmelized (about 10 minutes). Add caraway seeds, thyme and garlic. Add beef broth and salt to taste. Add pepper to taste. Simmer for 10-30 minutes. Ladle soup into 6 oven safe bowls. Top with croutons and cheese and place bowls on cookie sheet in oven at 350 until cheese is melted. Enjoy hot!
