Ingredients

Beans:
Canola or Olive Oil Cooking Spray
2 cans Bush's Low Sodium Black Beans, drained
1 clove Elephant Garlic
6 green onions, chopped
1/3 of a sweet onion, finely diced (dice the rest for Pico de Gallo and garnish)
1/3 packet McCormick Taco Seasoning Mix (about 1 1/4 T)
8 fresh corn tortillas
Pico de Gallo:
1 t extra virgin olive oil
1 cup ripe tomato, diced
1/4 cup sweet or red onion
1/2 jalapeno pepper, seeded and finely chopped
1/2 clove elephant garlic, finely chopped
2 T fresh cilantro, chopped
Juice from a lime wedge
1/4 t Kosher Salt
Toppings:
Pico de Gallo (above)
1 t Breakstone Reduced Fat Sour Cream
1/8 cup Reduced Fat Mexican Style Cheese, shredded
Lettuce
Salsa
etc.
Directions
Makes 16 soft tacos (8 servings).
Filling:
Coat bottom of saucepan with cooking spray. Saute garlic and onion, then add beans, taco seasoning, and 1/4 c water. Bring to a boil and reduce heat, simmering till liquid evaporates. Lightly mash beans, leaving some whole.
Heat corn tortillas in 350 oven to just warm.
Pico de Gallo:
Combine all ingredients, preferably an hour or two before meal time.
Add taco filling, pico de gallo, and other toppings (optional) and enjoy.
