Introduction
Excellent date-night-in receipe or family night recipe. I served this with my chickpea hummus receipe and it was extremely satisfying! Curbed my red meat craving in an instant!! Ingredients

1 lb of lean steak, top sirloin. Trim any fat. slice into strips.
1/4 cup lime juice
1 tbsp Olive Oil
2 garlic cloves (pureed or grated)
1/2 tbsp cumin powder
1 tbsp chili powder
1 tsp kosher salt
1 large yellow onion
16 small flour tortilla shells (6")
16 oz skim mozzarella cheese
Directions
Combine meat, lime juice, garlic, cumin, chili powder, salt olive oil and 1/4 cup water into sealable container. Refrigerate for 1 hour.
After merinade is complete heat skillet and brown meat until cooked to desired wellness. Add sliced onions to meat until tender.
Heat non-stick panini maker or lightly sprayed skillet/fry pan.
Place base tortilla shell onto heated surface. Top with 2 oz. meat, onions and 1/4 cup skim mozzarella cheese. Top meat mixture with additional flour tortilla. Close panini maker OR place a small fry pan ontop of quesidillas in hot skillet/fry pan. Cook until each side is golden brown.
Serve with chick pea hummus and salsa.
