This is a delicious soup done in a lighter version. This is a delicious soup done in a lighter version.
Number of Servings: 12


    Olive Oil, 2 tbsp
    Garlic, 2 cloves minced
    Pepper, black, 1 tsp
    Milk, nonfat, 4 cups
    Potato, raw, 8 medium (2-1/4" to 3-1/4" dia.) diced
    Scallions, raw, .5 cup, chopped
    Water, tap, 6 cup (8 fl oz)
    Cheddar Cheese, 1 cup, shredded
    Carrots, raw, .5 cup, chopped
    Celery, raw, .5 cup, diced
    Salt, 1.5 tsp


Saute the scallions and garlic in the olive oil until lightly golden. Add the water and potatos, carrots and celery and cook until tender. Continue cooking until liquid is reduced 1/3. Next add the remaining ingredients and simmer for 20 minutes.
In small batches, place the soup in a blender or food processer and puree.
Serve with a salad and/or your favorite bread.
