Introduction

Soooo amazing, you wont even know they're gluten free. I swear. Soooo amazing, you wont even know they're gluten free. I swear.
Number of Servings: 24

Ingredients

    1/4c Softened Butter
    1/4c Oil
    3/4c Dark Brown Sugar
    2 Egg Yolks
    1tsp Vanilla
    1/3c Water
    1/2tsp Xanthan Gum
    3/4c Potato Starch
    1/4c Tapioca Flour
    1/4c Coconut Flour
    1/4tsp Baking Soda
    1/2 tsp Salt
    1c Semisweet Chocolate Chips
    1/2c Shredded Sweetened Coconut

Directions

Preheat oven to 350.

In bowl cream Butter, Oil, and Brown Sugar.
Add Egg Yolks, Vanilla, and Water.
Mix well.
Add remaining ingredients except Chips and Coconut.
Mix well, remove all lumps.
Fold in Chips and Coconut.

Drop rounded teaspoonfuls onto greased baking sheet.
Bake 8-10 minutes.

Makes about 2 dozen amazing cookies.

    THESE ARE WONDERFUL!!!! So tasty, light and crispy. A decent sized cookie for 78 cals. SOOO good though it's hard to eat just one. - 1/21/13
