    Beef, top sirloin, 12 oz
    *Soy Sauce, 3 tbsp
    Garlic, 3 cloves
    Romaine Lettuce (salad), 2 cup, shredded
    Onions, raw, 1 medium (2-1/2" dia)
    Eggplant, fresh, 2 eggplant, unpeeled (approx 1-1/4 lb
    Red Ripe Tomatoes, 3 medium whole (2-3/5" dia)
    Green Peppers (bell peppers), 1 cup, chopped
    Olive Oil, 1 tbsp
    5 sprays oil in a can


marinate the beef in the soy sauce and garlic for at least one hour but longer if possible.

When putting the salad together cut up the onions and peppers and pour over the olive oil. mix them up and then bake in the oven until cooked and sweet.

cut the eggplant into thick slices and spray with oil. cook on hot non stick pan or skillet for a few mins each side.

Finally cook the beef in a hot pan until liquid is gone and it is cooked

put the salad ingredients into a bowl and top with the beef, onions, peppers and eggplant.

Serve on its own or with some crusty bread.
