Ingredients

    3 kg Tomatoes, ripe
    2kg Sugar
    4 Lemons

Directions

Skin tomatoes by scalding for a few minutes in boiling water, Place in a large saucepan with sugar, lemon juice and finely shredded rind.
Boil rapidly until jam sets when tested.

NOTE:
If making jam be sure that the jars are heated to seal well. Rest them in hot water and dry quickly before filling each jar.
