Ingredients

    1 whole garlic
    1 T olive Oil
    1 28 oz. can diced tomato undrained
    2 T. Tomato paste
    3 C. Chicken broth - Fat Free
    2 T Flour
    1/2 C fresh basil
    1/2 C FF 1/2 & 1/2
    1/4 t pepper
    11/2 cup chopped onion

Directions

wrap garlic in foil and bake for 40 minuted @ 350*. Cool 10 minutes. Press & discharge garlic from skin. Heat olive oil saute onion and garlic. Add tomato & paste. Cook 5 minutes. Add 2 1/2 C broth. Combine flour & broth- whisk. Add to tomato mixture. Bring to a boil, reduce heat. Simmer for 30 minutes. Blend in a food processor until smooth. Process basil with soup. Add 1/2 & 1/2. Serve.

    This was delicious. I did change a few things,though. I didn't have fresh basil so I used some homemade pesto that I had in the freezer. I also used fat free half and half instead of regular and roasted garlic in a jar. - 2/3/10

    Great recipe. Thanks for sharing. I measured it out and it makes 6 cups so a serving is a cup and a half. - 4/20/10

    Very Good
    Roasted my garlic, but don't know that it had a major impact on the soup, relative to the time it takes to roast it. Didn't have fresh basil so used the stuff from the tube, about a third of the tube. The soup is great, and I'm truly not a tomato soup fan!! - 3/28/10
