Introduction
Really tasty and they keep in the fridge well. I like to make them one night then take them to work the next day for lunch! Really tasty and they keep in the fridge well. I like to make them one night then take them to work the next day for lunch!Number of Servings: 4
Ingredients

2 cans boneless skinless pink salmon 5 oz each, drained
1 bunch scallions, thinly sliced or diced
1 Tbsp fresh herbs, minced (parsley, chives, dill, cilantro, or basil)
1/4 cup whole wheat breadcrumbs
1 Tbsp mayonnaise
1 egg
1 tsp Dijon Mustard
pepper, to taste
Directions
Mix all ingredients in a mixing bowl.
Refrigerate for about half an hour or so to let the ingredients come together and the flavors blend. Then form into 4 patties.
Spray a skillet with non-stick spray and lightly "saute" the patties on each side about 5 mins or until golden brown.
I like serving this with rice or a salad. These are so low in calories individaully you have a LOT of options with the sides so play around!
