Introduction

An easy, light, but filling lentil soup. An easy, light, but filling lentil soup.
Number of Servings: 10

Ingredients

    4 cups dry lentils, picked and rinsed
    1/2 medium onion
    4 medium carrots, sliced
    4 celery stalks, sliced
    1 t. garlic, minced
    4 t. vegetable bouillon (I used Better than Bouillon No Beef Base)
    4 T. Kitchen Witch seasoning (you can sub other creole seasoning, just watch the saltiness)
    Salt and pepper to taste
    1/4 c. lemon juice

Directions

Saute the onion, carrot, garlic, and celery in a large stockpot until it begins to brown. Add the lentils, bouillon, and 6 cups of water. Bring to a boil and simmer until the lentils are done. You will need to keep adding water to make sure the soup stays soupy. Add the seasoning, lemon juice, and TVP and turn off the heat. Let it sit for a few minutes until the TVP is soft. Makes 10 2-cup servings.
