    1 egg
    1 cup of flour
    3 chicken breast halves
    2 tbs of butter
    1 cup chicken broth

    Cranberry mushroom quinoa
    1 package of Bella mushrooms, chopped
    1/2 large sweet onion, chopped
    2 tbsp of butter
    2 cups cooked quinoa
    4 tbsp cranberry sauce (whole cranberry kind)
    1/2 stick fresh Rosemary


Cook quinoa. Chop onions and mushrooms. Put 2 tbsp of butter in pan on med heat. Sauté onions and mushrooms until soft. Turn off heat. In another pan put 2 remaining tbsp of butter on medium heat. Batter chicken with egg and flour. Put chicken in second pan. Add some of the onion and mushrooms and 1/4 cup of chicken broth and cook chicken adding more broth as it reduces to make a gravy. When chicken is almost done turn heat back onion onion and mushrooms, add Rosemary cranberry and a small amour of chicken broth and simmer about 5 minutes. Cut chicken into bite size pieces in pan and serve
over the quinoa pilaf.
