Ingredients

    2 Tbsp Olive oil
    3 oz Pancetta- diced
    1/4 cup diced carrots
    1/4 cup diced celery
    4 cloves garlic- minced
    3 15oz cans of cannellini beans, drained
    5 cups fat free chicken broth
    1/2 cup shredded Parmesan
    1 tsp Thyme


Directions

Heat olive oil and brown pancetta for 5 minutes. Add onion, carrots and celery and sautee for 5 more minutes. Add garlic and cook for 3 minutes. Add beans, broth, thyme and bring to a simmer. Cook for 10 \-15 minutes. Puree the soup in a blender or with an immersion blender. Stir in Parmesan and serve.
