    1 T Olive Oil
    1 Med Onion (chopped)
    2 Cloves Garlic (chopped)
    1 T Curry Powder
    1600g. Butternut Squash - (chopped)
    4 c. Pacific Chicken Broth
    2 c. water
    2 Knorr Chicken Cube
    1/2 t. Salt
    Add extra curry powder if you want


Saute onion in olive oil until softened. Add garlic and chopped squash and mix together. Add curry powder and stir. Add chicken broth and simmer until squash is tender. Blend with immersion blender until smooth - add salt and serve.
Makes 7 1-1/2 cup servings
