    6-7 large carrots, peeled and roughly diced
    3 small potatoes, roughly diced
    2 tablespoons garlic-flavored olive oil
    Salt and pepper to taste


Peel and roughly dice carrots. Dice potatoes (I leave on the skin.) Place in large bowl and drizzle with olive oil. Toss to thoroughly coat. Place veggies on baking sheet. Bake in 350 degree oven and roast for 20-25 minutes until veggies are carmelized.
