    In 1st bowl mix the following ingredients together:
    1 2/3 C Hodgson Mill Gluten Free Multi Purpose Baking Mix
    2/3 C gluten free oat flour (or oats ground in food processor)
    2/3 C Potato Starch
    1/3 C Corn Starch
    2/3 C dry milk powder
    1 TBSP Xanthan Gum
    1-2 tsp salt
    1-2 tsp granulated sugar (for proofing yeast)

    In 2nd bowl mix together:
    2 eggs (room temp is best)
    1 tsp apple cider vinegar
    1/4 C Extra Virgin Olive Oil or other oil allowed in your diet
    (1/4 c of melted butter may also be used)
    2 TBSP brown sugar (may be omitted)
    1 1/4 C very warm water (105 degrees)
    1/4 c honey (I add it after the water and mix it quickly together)
    Pour all liquid ingredients into the bread machine pan.
    Spoon the dry ingredients on top of the liquid. Smooth it into the corners with the spoon making a small well in the middle for the yeast. (the yeast cannot get wet)
    Add 1 packet yeast or 2 1/4 tsp of bread machine yeast.
    I use an Oster ExpressBake on the whole wheat Rapid setting for 2 lb loaf. The setting is for 2.33 hours. During the kneading, I use a spatula to make sure all flour is mixing in and the batter is not sticking to the sides. I do this 3 different times. After the last kneading at time of 1.30 I remove the paddle and smooth the top with an oiled spatula. Note: My old model of breadmaker did not have a setting for less than 3 hours and it didn't work very well.
