    1 c warm water
    2 1/2 c white whole wheat flour
    1 Tb olive oil
    1 packet yeast
    1 Tb honey
    3/4 tsp salt
    2 tsp vital wheat gluten

    5 c broccoli
    2 Tb olive oil
    4 Tb shallots
    5 oz grated mozzerella cheese
    5 oz feta cheese crumbled


The night before, 1st 6 ingredients in bread machine set on dough cycle. Saute shallots in olive oil a few minutes and add broccoli sauteing untill done. Add pepper. Pat dough onto a jellyroll pan covered in foil. Make a 16" circle as even a thickness as possible, stretch if needed. Fill 1/2 of circle w/broccoli, feta, and mozzerella, fold other 1/2 of dough over filling and crimp edges by pulling lower edge up and over top edge. Slash into dough diagonal cuts, trying not to cut all the way through dough. Bake at 425 20 minutes or until golden.
