Get a good daily dose of your veggies with this hearty beef stew. Even my husband likes it - and he is very picky. Get a good daily dose of your veggies with this hearty beef stew. Even my husband likes it - and he is very picky.
Number of Servings: 4


    2 tsp Olive Oil
    1 lb of lean stewing meat, cubed
    1 garlic clove, crushed
    1 small onion
    1 1/2 cups carrots, chopped
    2 celery stalks
    1 small red potato, diced
    14 oz (1 1/2 cups) of Low Sodium Beef Broth
    1/4 cup Whole Wheat flour
    1/2 cup frozen green peas
    1/2 cup yellow corn kernals
    Salt and pepper to taste (optional)


1. Add olive oil to stew pot set on medium-high. Add beef cubes and brown for about 5 minutes.
2. Add in onion, carrots, garlic and celery and sweat vegetables for about 5 minutes.
3. Whisk the beef broth and the whole wheat flour together and then add to pot.
4. Add the potatoes, peas & corn and bring to boil.
5. Reduce to a simmer and partially cover; let simmer for 20 to 25 minutes or until potatoes are tender. Stir occasionally.
6. If stew seems too thick, add 1/2 cup of water at a time until desired thickness.
7. Serve with salt and pepper to taste. Makes 4 servings.

To kick up the flavor, a 1/2 cup of your favorite red wine can be added to this dish during cooking. However, the extra calories from the wine are not included in this recipe.

I dish this out evenly between 4 glass bowls, cover with plastic and refridgerate. Then when it comes time to eat, take the plastic cover off and microwave for 1 to 1 1/2 minutes, stir, and enjoy!
